Three Cheese, Pasta and Pancetta frittata with a Lentil and Olive salad

Three Cheese, Pasta and Pancetta Frittata
Lentil and Olive salad
1 cup of green lentils
1 tablespoon of lemon juice
1 tablespoon of balsamic vinegar
2 tablespoons of olive oil
1 red capsicum
1 jar of green olives
1/2 teaspoon of sweet paprika
1/2 cup of freshly chopped oregano
Salt and pepper to taste.—-
Put three cups of water in a saucepan, add the cup of lentils and bring to a simmer. Cook them until the lentils are soft… should be about 30 minutes. Drain them in a colander and let them cool.
Chop the capsicum and the olives and add them to a bowl, along with the lentils. Throw in all of the herbs, spices, oil, juice and vinegar and toss it all together. Delicious.
